Every great cup begins with great water.

ION+ was founded by ChunKheng Chew (CK), a specialty coffee professional and competitor in the Malaysia Brewers Cup and numerous coffee brewing competitions. His journey into brewing water began in 2019, driven by a simple question: Why were carefully sourced coffees still produce inconsistent results?

After years of brewing, roasting, and experimentation, he discovered that the answer often lay not in the coffee or the brewing technique, but in the water itself. This realisation sparked an ongoing pursuit to understand how mineral composition influences extraction, flavour clarity, sweetness, mouthfeel, and overall cup quality.

Driven by curiosity and precision, CK spent years studying brewing water, refining mineral formulations, and evaluating their performance across a wide range of coffees and brewing methods. While preparing custom water for his own competition brews, fellow baristas and coffee enthusiasts began requesting the same formulations for their own brewing.

What started as a personal pursuit soon became a shared passion.

In July 2023, ION+ was officially established with a clear mission: to create precision-engineered brewing water that helps every coffee express its fullest potential. Every formulation is developed through continuous research, sensory evaluation, and real-world brewing experience, ensuring consistent performance from home brewers and cafés to the competition stage.

Today, ION+ continues to refine every profile with one philosophy in mind: water should enhance the coffee, never overpower it. Every mineral is carefully selected and balanced to support clarity, sweetness, structure, and consistency—giving brewers greater confidence in every cup.
